How To Make Egusi Soup (Melon Seed Soup)

Creamy, spicy, and flavorful Egusi soup is a Nigerian favorite enjoyed with pounded yam, eba, or rice.

Ingredients:

  • 2 cups ground egusi (melon seeds)
  • 1/2 cup palm oil
  • 1 onion (blended)
  • 2 cups spinach or ugu leaves
  • 1 tbsp ground crayfish
  • Assorted meats (beef, tripe, stockfish)
  • 1 scotch bonnet (blended)
  • 2 cups meat stock
  • Seasoning cubes
  • Salt to taste

Steps:

  1. Heat palm oil in a pot, add blended onion and pepper, and fry for 5–7 mins.
  2. Stir in ground egusi and fry for 10 mins, adding meat stock gradually to form a thick paste.
  3. Add cooked meats and crayfish.
  4. Simmer for 10–15 mins, then stir in vegetables.
  5. Season to taste and serve hot.
