How To Make Egusi Soup (Melon Seed Soup)

Creamy, spicy, and flavorful Egusi soup is a Nigerian favorite enjoyed with pounded yam, eba, or rice.
Ingredients:
- 2 cups ground egusi (melon seeds)
- 1/2 cup palm oil
- 1 onion (blended)
- 2 cups spinach or ugu leaves
- 1 tbsp ground crayfish
- Assorted meats (beef, tripe, stockfish)
- 1 scotch bonnet (blended)
- 2 cups meat stock
- Seasoning cubes
- Salt to taste
Steps:
- Heat palm oil in a pot, add blended onion and pepper, and fry for 5–7 mins.
- Stir in ground egusi and fry for 10 mins, adding meat stock gradually to form a thick paste.
- Add cooked meats and crayfish.
- Simmer for 10–15 mins, then stir in vegetables.
- Season to taste and serve hot.
